Edward L. Mertz, 72, of Bushkill Twp., passed away peacefully while surrounded by his loving family on Wednesday, December 3, 2025 at his residence. He was the beloved husband of Debra Mertz (Koch) to whom he was married to for 53 years. Born in Allentown, Edward was a son of the late Lloyd and Anna Searfoss (Malitsch).
He was the proud owner and operator of George's Light Lunch in Bethlehem, where he shared his passion for cooking with many. Edward created a welcoming environment filled with delicious food and laughter, making the luncheonette a cherished gathering place for his loyal patrons. His love for life extended far beyond the kitchen; he was a man of many interests. Known for his adventurous spirit, Edward enjoyed riding his Harley-Davidson Trike, often embarking on joyful rides with his beloved wife, Debra. He valued spending time with his family, relishing the simple pleasures of cooking and participating in lively cornhole games. Most importantly, Edward cherished family gatherings, creating lasting memories. He was a member of Holy Family Parish in Nazareth and proudly served his country in the United States Army during the Vietnam era.
In addition to his wife, he will be lovingly remembered by his sons: Chad Mertz (Danielle) of Whitehall and Jason Mertz (Jennifer) Bethlehem Twp.; grandchildren: Shaelyn, Tanner, Kenedee, Yoshi, Chloe, Emma, Skye; sister: Joann Hillegass (William) of Perkiomenville.
A Memorial Service will be held at 7 PM on Tuesday, December 16, 2025 in the GEORGE G. BENSING FUNERAL HOME, INC. 2165 Community Drive - Bath, PA 18014. Friends and Relatives are invited to call Tuesday from 5 PM until the time of the service. Interment of cremated remains will take place privately at Greenwood Cemetery - Nazareth.
